All wine and craft beer served is sourced from Ontario- based wineries and breweries. MTCC has developed a close partnership with Cookstown Greens, a local family-owned farm that cultivates over 120 varieties of microgreens and organic root vegetables in greenhouses and open fi elds year-round, ensuring a steady supply of fresh, fl avourful produce. SUSTAINABLE SOURCING MEETS CULINARY CREATIVITY When the Principles for Responsible Investment (PRI) organization requested exclusively vegan and vegetarian meals for their three-day PRI in Person conference, the Metro Toronto Convention Centre’s (MTCC) culinary team rose to the challenge, tapping into their creative fl air and local network of partners. This marked the fi rst time the venue catered a 100% vegetarian and vegan conference. The culinary team, led by Executive Chef Duff Lampard, worked closely with PRI to understand their needs and vision, ensuring a menu that featured locally sourced, in-season ingredients such as fruits, vegetables, grains and legumes. Renowned for diverting most of their event waste from landfi lls, the MTCC team took sustainability to the next level by introducing live-action Chef’s Stations, where fl avourful, fusion-inspired dishes were prepared on demand, further minimizing waste and enhancing the culinary experience.
